We are talking wild asparagus. So you have to go out and find them. And now is the season. Especially in central Italy people go into the countryside to find those tiny treasures.
Wild asparagus is green and tiny and full of flavor. It is perfect in a “frittata” – an asparagus omelette, as risotto or in a “torta salata” – a quiche made with asparagus.

y wild asparagus grows next to olive and other trees. You can find it by looking for the thistly plant next to it.
Since asparagus plants are perennial, the same plant grows year after year. So you better remember for next year’s hunting season…
