In order to make a fantastic pizza you need genuine and fresh ingredients, a proper oven and enough to leaven. Nowadays pizza is also the most appreciated Italian’s brand worldwide estimated at about € 62 billion business (data of the Italian Export Federation). The report also highlights that Italy, Germany, France and Spain represent 78% of the all market. In Italy we count 42,000 pizzerias, which 21,000 are “take-away” and about 100,000 employees.
Presently, In Italy, the consumption of pizzas per week is estimated at 56 million, which means nearly 3 billion pizzas consumed in a year!!
The cost ranges vary from € 2.88 of pizza in slice sold in delicatessens, bakeries and caterers, up to € 5.90 (others claim that the average is € 6.50) of traditional pizzas served in restaurants and “pizzeria”. The costs vary from city to city: Milan is the most expensive, Reggio Calabria the cheapest.
